Second Paula Dean Entry

Last night I uploaded another video to week 2 of Paula Dean’s cream cheese contest. It is the video of the Spinach Artichoke Wontons — I posted the recipe earlier:

We are going to film 2 more this weekend for the remaining 2 weeks of contest: The Lemon Fudge Cheesecake (previously posted here, but not the video) and a new recipe for stuffed cabbage with cream cheese sauce. My mouth is watering!

Oh — for you other foodies — One of my competitors posted an incredible looking squash casserole for her side dish and I am dying to try it!!! Here’s the link. Plus I like her cause she’s 50 and wears a tiarra.

Honorable Mention

I got a note this morning that I had won a prize for my Peach Nut Chicken video. One of the factors in determining the winner was number of video views and user votes. Since I turned mine in in the last couple of days, she felt I SHOULD have had more votes. Anyway, she’s sending me a cookbook and announced my name in her twitter blog!

Otherwise, it’s been kind of a slow week. No contests until the 15th, so we’ve gotten a chance to catch our breath. I have to turn in another Paula Dean video — appetizers. But Tabby shot the video last weekend, I just need to edit it.

Easter Sunshine

It was an absolutely beautiful weekend here — the sun was shining and I took my Mom to Cherokee overnight. Today is Easter Sunday and I had to come up with a unique cake suggestion for Family Fun. With all the sunshine, I decided a simple cake shaped like a sun with the message “You are my sunshine” fit right in!

Sunshine Cake

Paula Dean

We had a fun Good Friday doing a video for a multi-week contest Paul Dean is sponsoring with Philadelphia Cream Cheese. For this one, we have to do 4 videos – 1 a week. The one we did this week was side dishes and I did an apple croquette. It’s really quite good, but you might want to drop the cumin to 1 tsp instead of 1-1/2tsp. We also wound up adding more potatoes (2 cups all together). Here’s a link to the video, and I’m adding in the other recipes I haven’t linked to:

Mr. McBacon Pants

Okay … quick blog! As you may or may not realize, I had to enter like 30 contests this week to get end of March deadlines! One happened to be called … Mr McBaconPants … Whatever! T-Shirt, free food. Sounded fun! I submitted Tabby’s devilled potatoes (potato/egg salad in a potato shell). I got an email earlier today that we were finalists — but didn’t win. We were however featured on their “show”!!!

This is pretty funny actually if you have a few minutes! The guys review our recipe around minute 28 if yu want to forward! Wow. This is hilarious! Maybe Axel can get into Bacon University and study with these guys!

Scroll down to their “live” video cast!!! A hoot. Oh, also, It has come to my attention that I may have unfairly swayed readers toward my favorite dinner recipe (as opposed to Tabby’s) by not posting hers. Serious … an oversite only! I’ll post hers here now …. mmmm. Oopsy! Can’t seem to find it on this computer … Maybe tomorrow!!! (Happy Birthday APRIL!!! Luv u.)

another win .. maybe???

I’ve had numerous emails today from the contest judge at NuVal regarding one of my entries (requesting bio info etc.) … But don’t get TOO excited! Winnings aren’t huge — t-shirt, goody basket, write up kind of thing. … it’s probably actually a combo entry. Tabby wrote the original SW Mac and Cheese Recipe … This contest was actually about making recipes healthier — featuring a system called NuVal. This is actually a pretty cool thing … it ranks products for “healthiness” based on a scale of 1-100 with the higher the number, the healthier.
Tabby LOVES those feel good ingredients (butter; fat; cheese … etc.) Her recipe was really tasty … but a lot of her ingredients were pretty easy to sub out! Here is the email I sent to NuVal — see what you think about it! As a mom, I was SHOCKED with the difference by subbing out the Greek Yogurt (it’s in the Publix super markets!) for the heavy whipping cream! Plus, the homemade Alfredo – vs Ragu – was huge!

Here’s the comparison email — see what you think!

I love this! Thank you! Do you happen to have a photo of the recipe that I can include? Also, would you be able to write a little bio about yourself? I’d like to include it with your recipe.

Uploading promised recipes!

I’m pretty exhausted right now … we’re at the end of our Q1 marathon list of contest entries! (you know, while in my spare time, I try to keep a busy WORK schedule!!!!)

Anyway, I just finished the last big contest recipe/photo. I’m too exhausted to actually upload that one (frankly, Tabby and I REALLY want to nail this one. It’s reward is a Alaskan Cruise for 2 in September!!

But .. to bring folks up to date .. we’ve cooked all weekend .. I’ve cooked all day yesterday and today (between meetings), and now have just finished the biggie! Below are links to the awesome recipes! I will say that every single one has gotten a thumbs up from family! Tabby’s instincts are awesome! Right now she’s trying to convince me that we should consider (for an Easter dessert recipe) that chocolate pudding and Jello would be a good mix … I’m not there YET! But she does tend to influence me!!! To influence you, of course, I gotta say that I found the Irish Mushrooms hard to resist. Tabby says the Cheesy Artichoke Meat Pie is “to die for”!!! Enjoy them all.

Frozen Raspberry Banana Chocolate Cheesecake Bites
Grilled Shrimp Pizza

Quick Update with Video!

We managed to finish 4 of the 6 entries/recipes slated for yesterday and hope to get the others today.

One of the entries was a “video” entry (which had to be me, cause 18 years or older). It actually didn’t turn out too bad! It’s for Oven Fried Peach Nut Chicken. Here’s the link. (copy into your browser .. haven’t figured out how to put automatically into my blog!!!)

The other recipes are on Tabby’s computer, so gotta wait for her to get here to upload.

Cooking Madness!

Tabby and I looked at our contest lists yesterday and realize that there are now 25 contests between now and Wednesday! We went through the list and picked out some we could recycle previous recipes for, and those that need new recipes for. We wrote out our recipe ideas and I did the shopping yesterday. Today … massive cooking day. I got up early and started the corned beef boiling. I also made the Omelets Benedict for the family for breakfast (Richard was out running in the rain, Tabby and Axel both slept in!) When they all came in, they all gave a thumbs up on the breakfast!

Here is the breakfast recipe:
